Kerala rice ada cooked in jaggery and coconut milk — the king of all payasams and the most celebrated Onam dessert.
Ingredients
1 cup rice ada
2 cups jaggery
3 cups thin coconut milk
1 cup thick coconut milk
Ghee
Cardamom
Dried coconut chips
Cashews
Raisins
Method
Cook ada in water until soft. Melt and strain jaggery. Cook ada in jaggery syrup until thick. Add thin coconut milk and simmer 15 minutes. Add thick coconut milk on low heat. Fry coconut chips and cashews in ghee.
