A versatile everyday chicken curry — warming, full-flavoured and ready in under an hour.
Ingredients
- 1 kg chicken, bone-in pieces
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp turmeric
- 1 tsp red chilli powder
- 2 tbsp oil
- Fresh coriander
- Salt to taste
Method
- Heat oil, add cumin seeds.
- Fry onions until golden brown.
- Add ginger-garlic paste and cook 2 minutes.
- Add tomatoes and cook until mushy.
- Add all dry spices and cook 2 minutes.
- Add chicken pieces, coat in masala.
- Add 1.5 cups water, bring to boil.
- Cover and simmer 25 minutes until chicken is cooked.
- Garnish with coriander.
