Soft milk-solid dumplings soaked in fragrant rose sugar syrup — India's most beloved sweet.
Ingredients
- 1 cup khoya (dried milk solids)
- 1/4 cup all-purpose flour
- 1 tbsp semolina
- 1/4 tsp baking soda
- Milk to knead
- For syrup: 2 cups sugar, 1.5 cups water, 4 cardamom pods, 1 tsp rose water
Method
- Make sugar syrup by dissolving sugar in water with cardamom. Boil 5 minutes. Add rose water.
- Mix khoya, flour, semolina and baking soda.
- Add milk gradually to form soft smooth dough.
- Roll into small smooth balls — no cracks.
- Deep fry on very low heat until dark golden brown (they must be deep brown inside).
- Drop immediately into warm syrup.
- Soak minimum 1 hour before serving.
