Steamed fermented rice cakes served with tangy lentil vegetable soup — South India's beloved breakfast duo.
Ingredients
- For idli: 2 cups idli rice, 1 cup urad dal soaked and fermented
- For sambar: 1 cup toor dal, mixed vegetables, 2 tbsp sambar powder, tamarind extract, mustard seeds, curry leaves, dried red chillies
Method
- Grind urad dal smooth, mix with ground rice. Ferment 8 hours.
- Grease idli moulds and pour batter. Steam 12 minutes.
- For sambar: pressure cook toor dal with turmeric.
- Boil vegetables in tamarind water.
- Add sambar powder and cooked dal. Simmer 15 minutes.
- Tempter with mustard seeds, curry leaves and dried chillies in oil.
- Serve idli with sambar and coconut chutney.
