Thin melt-in-the-mouth besan rolls tempered with mustard seeds — Gujarati delicacy for special occasions.

Method

  1. Mix besan, yogurt, water, turmeric, ginger-chilli and salt to lump-free batter.
  2. Cook on medium heat stirring constantly until thick. This takes about 12-15 minutes.
  3. Test: spread a small amount on a greased plate. If it rolls up cleanly, it is ready.
  4. Spread in thin even layer on greased plates.
  5. When cooled slightly, roll into tight cylinders.
  6. Slice into 1.5-inch pieces.
  7. Add tempering of mustard seeds, sesame and curry leaves. Pour over rolls.
  8. Garnish with coconut and coriander.
