Zesty South Indian lemon rice with turmeric, peanuts and curry leaves — a tangy, flavourful rice that is quick and universally loved.
Ingredients
2 cups cooked rice
Juice of 2 lemons
1/2 tsp turmeric
Mustard seeds
Chana dal
Urad dal
Dried red chillies
Curry leaves
Peanuts
Green chillies
Ginger
Oil
Salt
Method
Heat oil and fry peanuts. Add mustard seeds, dals, chillies, curry leaves and ginger. Add turmeric. Mix in cooked rice. Add lemon juice and salt. Toss well and serve.
