A spiced Indian omelette with onions, tomatoes and green chillies — the best 5-minute breakfast.
Ingredients
- 2 eggs
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1 green chilli, chopped
- Fresh coriander
- 1/4 tsp turmeric
- Salt and pepper
- 1 tsp butter
Method
- Beat eggs with salt, pepper and turmeric.
- Add onion, tomato, chilli and coriander. Mix.
- Heat butter in pan on medium-high heat.
- Pour egg mixture and let it set for 30 seconds.
- Fold edges and let bottom brown lightly.
- Flip and cook 1 minute.
- Serve with toast and hot sauce.
