Crispy ring-shaped lentil fritters with fluffy interior — a South Indian must-have with sambar.

Method

  1. Drain soaked urad dal and grind to thick fluffy batter with minimal water.
  2. Add onion, chillies, curry leaves, cumin, pepper and salt.
  3. Wet your hands. Take a ball of batter, make a hole in centre to form a ring.
  4. Slide into hot oil. Fry until golden and crisp, about 3-4 minutes per side.
  5. Drain on paper towels.
  6. Serve hot with sambar and coconut chutney.
