Crispy ring-shaped lentil fritters with fluffy interior — a South Indian must-have with sambar.
Ingredients
- 1 cup urad dal, soaked 4 hours
- 1 onion, finely chopped
- 2 green chillies, chopped
- 10 curry leaves
- 1 tsp cumin seeds
- 1 tsp black pepper, crushed
- Salt to taste
- Oil for deep frying
Method
- Drain soaked urad dal and grind to thick fluffy batter with minimal water.
- Add onion, chillies, curry leaves, cumin, pepper and salt.
- Wet your hands. Take a ball of batter, make a hole in centre to form a ring.
- Slide into hot oil. Fry until golden and crisp, about 3-4 minutes per side.
- Drain on paper towels.
- Serve hot with sambar and coconut chutney.
