Rustic Kerala village-style chicken curry with coconut oil and roasted coconut — bold, earthy and deeply satisfying.
Ingredients
1 kg chicken
2 onions
2 tomatoes
1 cup grated coconut roasted
Kerala garam masala
Ginger garlic paste
Coconut oil
Curry leaves
Salt
Method
Roast grated coconut until golden brown, grind to paste. Fry onions in coconut oil until golden. Add ginger garlic paste and Kerala spices. Add chicken pieces and cook. Add coconut paste and simmer until thick.
