  1. Mix besan with all spices, chillies and salt.
  2. Add water to make a thick batter.
  3. Coat vegetables in batter.
  4. Heat oil to medium-high.
  5. Drop spoonfuls into oil and fry until golden and crisp.
  6. Drain on paper towels.
  7. Serve hot with green chutney and hot chai.
