  1. Blanch spinach in boiling water for 2 minutes, then blend to smooth puree.
  2. Heat ghee, add cumin seeds.
  3. Sauté onions until golden, add ginger-garlic paste.
  4. Add tomatoes, cook until mushy.
  5. Add dry spices and cook for 2 minutes.
  6. Pour spinach puree and simmer for 5 minutes.
  7. Add paneer, cream, and salt. Cook 3 more minutes.
  8. Serve with hot rotis.
