Velvety spinach curry with golden-fried paneer — nutritious, vibrant and absolutely delicious.
Ingredients
- 500g fresh spinach
- 250g paneer, cubed and lightly fried
- 1 onion, chopped
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 2 green chillies
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp garam masala
- 2 tbsp cream
- Salt to taste
- 2 tbsp ghee
Method
- Blanch spinach in boiling water for 2 minutes, then blend to smooth puree.
- Heat ghee, add cumin seeds.
- Sauté onions until golden, add ginger-garlic paste.
- Add tomatoes, cook until mushy.
- Add dry spices and cook for 2 minutes.
- Pour spinach puree and simmer for 5 minutes.
- Add paneer, cream, and salt. Cook 3 more minutes.
- Serve with hot rotis.
