Succulent prawns tossed in a bold onion-tomato masala with coastal South Indian spices.
Ingredients
- 600g large prawns, cleaned and deveined
- 2 onions, finely chopped
- 2 tomatoes, chopped
- 1 tbsp ginger-garlic paste
- 1 tsp red chilli powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 1/2 tsp turmeric
- Curry leaves
- 2 tbsp coconut oil
- Fresh coriander
Method
- Marinate prawns with turmeric and salt.
- Heat oil, add curry leaves.
- Fry onions until golden, add ginger-garlic paste.
- Add tomatoes and cook until thick.
- Add all spices.
- Add prawns and cook on high heat 5-6 minutes — do not overcook.
- Garnish with coriander. Serve with rice or parotta.
