Tangy tamarind and lentil soup with mixed vegetables and aromatic sambar powder — South Indian soul food.
Ingredients
- 1 cup toor dal
- 1 cup mixed vegetables (drumstick, shallots, tomato, eggplant)
- 1 marble-sized tamarind ball
- 2 tbsp sambar powder
- 1/4 tsp turmeric
- For tempering: 1 tsp mustard seeds, 1 tsp cumin, curry leaves, 2 dry red chillies, asafoetida
- 2 tbsp oil
- Salt and fresh coriander
Method
- Pressure cook toor dal with turmeric until soft. Mash well.
- Soak tamarind in 1 cup warm water, extract pulp.
- Boil vegetables in tamarind water until tender.
- Add cooked dal and sambar powder. Simmer 15 minutes.
- Heat oil, add mustard seeds, cumin, curry leaves, dried chillies and asafoetida.
- Pour tempering over sambar. Garnish with coriander.
