Crispy golden pastry filled with spiced potatoes and peas — India's most loved snack, universally.
Ingredients
- For pastry: 2 cups all-purpose flour, 4 tbsp oil, salt, water
- For filling: 4 potatoes boiled, 1/2 cup peas, 1 tsp cumin seeds, 1 tsp coriander powder, 1 tsp garam masala, 1 tsp amchur, green chillies, coriander
Method
- Mix flour with oil and salt. Knead firm dough. Rest 30 minutes.
- Mash potatoes, add peas and all spice. Mix well.
- Divide dough into balls. Roll into ovals. Cut in half.
- Form cone with each half, seal edges with water.
- Fill with potato mixture. Seal the top.
- Deep fry on medium heat until golden and crisp, about 12-15 minutes.
- Serve with green chutney and tamarind sauce.
