Whole chicken marinated in a fiery red spiced yogurt and cooked until charred — a North Indian icon.
Ingredients
- 1 whole chicken or 8 pieces, scored
- 1 cup thick yogurt
- 2 tbsp ginger-garlic paste
- 2 tsp tandoori masala
- 1 tsp kashmiri red chilli
- 1 tbsp lemon juice
- 2 tbsp oil
- 1/2 tsp turmeric
- 1 tsp garam masala
- Salt
- Lemon wedges and raw onion rings to serve
Method
- Score deep cuts on chicken pieces.
- Mix all marinade ingredients into smooth paste.
- Rub into chicken ensuring marinade enters the cuts.
- Marinate minimum 4 hours, overnight best.
- Bake at 230°C for 25 minutes, turning halfway.
- Broil last 5 minutes until charred and slightly blackened at edges.
- Serve sizzling with lemon wedges, raw onion rings and mint chutney.
