Chilled almond-spice-rose milk drink traditionally made for Holi — refreshing, fragrant and festive.
Ingredients
- 1 litre full-fat milk, chilled
- 1/4 cup almonds, soaked
- 2 tbsp melon seeds
- 1 tbsp poppy seeds
- 1 tsp fennel seeds
- 6 cardamom pods
- 10 black peppercorns
- 1/2 tsp rose water
- 3 tbsp sugar
- Saffron and dried rose petals for garnish
Method
- Soak almonds, melon seeds, poppy seeds for 4 hours.
- Blend all soaked ingredients with a little milk to fine paste.
- Stir paste into chilled milk.
- Add sugar and rose water. Mix well.
- Strain through fine cloth for silkiest result.
- Refrigerate 1 hour.
- Serve over ice, garnished with saffron strands and rose petals.
