Fragrant Kerala coconut milk rice cooked with whole spices and ghee — a simple yet elegant dish from Malabar households.
Ingredients
2 cups basmati or jeerakasala rice
2 cups coconut milk
2 cups water
Ghee
Whole spices
Cashews
Salt
Method
Fry cashews in ghee. Add whole spices and fry. Add washed rice and fry 2 minutes. Add coconut milk, water and salt. Cook until rice is done and coconut milk is absorbed. Fluff and serve.
