Gujarati flatbread made with fenugreek leaves and spices — ideal for travel as it stays fresh for days.
Ingredients
- 1 cup whole wheat flour
- 1/4 cup besan
- 1/2 cup fenugreek (methi) leaves, chopped
- 1 tsp ginger-chilli paste
- 1/2 tsp turmeric
- 1 tsp sesame seeds
- 1/4 tsp ajwain
- 1 tbsp yogurt
- Oil for cooking
- Salt to taste
Method
- Mix all dry ingredients and methi leaves.
- Add yogurt and knead into soft dough using water.
- Roll into thin flatbreads.
- Cook on hot griddle with a little oil, pressing until golden spots appear.
- Flip and cook other side.
- Serve with pickle, yogurt or mango chutney.
