Semolina savoury porridge tempered with mustard seeds and vegetables — a wholesome South Indian morning.
Ingredients
- 1 cup semolina (rava)
- 2 cups water
- 1 onion, chopped
- 1 tomato, chopped
- 1/2 cup mixed vegetables
- 1 tsp mustard seeds
- 1 tsp urad dal
- 10 curry leaves
- 3 green chillies
- 2 tbsp oil
- Lemon juice, salt, coriander
Method
- Dry roast semolina until lightly golden. Set aside.
- Heat oil, add mustard seeds and urad dal.
- Add curry leaves, chillies and onion. Cook until soft.
- Add tomato and vegetables, cook 3 minutes.
- Add 2 cups water with salt, bring to full boil.
- Reduce to low and pour semolina in thin stream, stirring constantly.
- Cover and cook 5 minutes stirring once.
- Squeeze lemon and garnish with coriander.
