  1. Par-boil rice with whole spices until 70% cooked.
  2. Cook vegetables in spiced yogurt masala until half-done.
  3. Layer in heavy pot: vegetables, rice, fried onions, mint, ghee, saffron milk.
  4. Repeat layers.
  5. Seal and cook on dum: high 5 min, low 30 minutes.
  6. Garnish with fried nuts and raisins. Serve with raita.
