Aromatic layered rice with saffron and spiced mixed vegetables — vegetarian biryani done right.
Ingredients
- 3 cups basmati rice
- 2 cups mixed vegetables (carrot, peas, beans, potato)
- 2 onions, fried crispy
- 1 cup yogurt
- 2 tbsp biryani masala
- Whole spices
- Saffron milk
- 4 tbsp ghee
- Fresh mint and coriander
- Fried cashews and raisins
Method
- Par-boil rice with whole spices until 70% cooked.
- Cook vegetables in spiced yogurt masala until half-done.
- Layer in heavy pot: vegetables, rice, fried onions, mint, ghee, saffron milk.
- Repeat layers.
- Seal and cook on dum: high 5 min, low 30 minutes.
- Garnish with fried nuts and raisins. Serve with raita.
